A cuisine shaped by experience

The resort’s culinary direction is led by Executive Chef Tanveer Ahmed, whose journey with Constance Hotels & Resorts spans more than a decade and three Indian Ocean destinations. Chef Tanveer joined Constance Halaveli Maldives in 2014 as Sous Chef, before progressing through several leadership positions, including Chef de Cuisine and Executive Chef. His career subsequently took him to the Seychelles as Executive Sous Chef at Constance Lemuria, where he further developed an approach combining technical precision, international influences and heartfelt hospitality.

Now beginning a new chapter in Mauritius, he brings this experience to Constance Le Chaland with a leadership style defined by calmness, generosity and creativity. His cuisine reflects both the breadth of his international journey and his belief that even the most refined dish should remain sincere, approachable and full of flavour.

His personal recipe for success remains true to the Constance spirit: a generous dose of passion, a pinch of creativity, and a constant hunger to grow.

Wine as a journey of discovery

Alongside Chef Tanveer, Head Sommelier Delores Malin brings a distinctly personal dimension to the resort’s wine experience.

Delores Malin’s journey with Constance is itself a story of passion and progression. Beginning her career in housekeeping, she moved through the bar and restaurant teams before discovering her vocation in wine, a path that has since taken her through specialist training, international masterclasses, vineyard visits and encounters with leading winemakers, chefs and sommeliers.

Her achievements include being named Best Sommelier of Mauritius in 2019, winning the Best Sommelier award twice at the Festival Culinaire Bernard Loiseau and receiving the Passion Award at Constance Belle Mare Plage.

At Constance Le Chaland, her role extends beyond selecting and serving wines. Through personalised recommendations, carefully considered pairings and guided tastings, she invites guests to discover the stories behind each bottle, transforming wine service into a moment of conversation and connection.

At the heart of the resort’s wine experience, the wine cellar invites guests to explore terroir through carefully curated dinners and tastings. Home to approximately 600 to 650 references and around 7,500 bottles, the collection opens the door to a broad world of styles, regions and vintages. Five-course experiences such as Flavours of the Vineyard and A Journey through Terroir bring together Chef Tanveer’s cuisine and Delores’s wine selections, travelling through renowned and unexpected wine regions from Europe to the Southern Hemisphere. Beyond dinner, curated tastings range from World of Pinot and The Art of Cheese & Wine to The Secret Cellar, while the Takamaka Symphony Trilogy brings the journey home to Mauritius. Selected wines are served through Coravin in measured 10cl pours, allowing distinctive vintages to be discovered while preserving the integrity of each bottle.

Across the resort, each dining experience reveals a different expression of flavour and atmosphere. At Horizon, evenings unfold around a buffet-style dinner inspired by a changing theme, bringing new culinary influences to the table each night. At Flame & Tide, the experience becomes more sensory, with fresh seafood grilled over the open kitchen, and ocean views setting the scene for dinner in the modern dining room or at the open-air bar.

By day, Aqua Pool embraces a more relaxed rhythm, with a fresh, colourful menu designed for easy-going moments of sharing and discovery. This spirit continues into the evening at Karokan Bar, where Mauritius takes centre stage through tropical ingredients, contemporary cocktails and an extensive selection of local rums. Creations such as Jardin Mauricien and Punch de la Cambuse bring together rum, coconut, lemongrass and kaffir lime, while labels from Chamarel, Saint Aubin, Labourdonnais, Oxenham and New Grove showcase the breadth of the island’s rum-making craftsmanship.
