Fundamental Hospitality’s INA Presents the ‘Masters of Fire’ Chef Series, Hosting Eight International Chefs Over Eight Months

J1 Beach’s renowned dining destination, INA, is set to launch its Masters of Fire Chef Series this October. Running for eight months, the series will bring together eight of the world’s most celebrated chefs — each a master in the art of cooking over flame — to collaborate with INA’s Chef Glen Ballis. Each edition will present fire-led dinners featuring signature dishes created alongside Chef Glen Ballis, showcasing how diverse culinary styles come to life over open fire.

On the shores of J1 Beach, INA is the latest creation from Fundamental Hospitality, brought to life by Chef Glen Ballis. With Dubai’s largest open-flame grill at its heart, INA celebrates instinctive, ingredient-led dining in a climate-controlled open-air setting where fire shapes every dish.

The series will debut with its first dinners on 15th and 16th of October, featuring chefs George & William Jardine. With a string of accolades — including a previous spot on San Pellegrino’s World’s 50 Best Restaurants list — the Jardines bring a rich culinary legacy and the skill to transform seasonal ingredients into an unforgettable fire-led experience.

In November, INA will welcome Stephen Moore of SHELTER, Bali, whose modern yet soulful approach to cuisine has earned international recognition. His collaboration on 12th and 13th of November will reflect his ingredient-driven style and creative use of fire.

The following months will continue the series with exceptional names from across the globe. January will feature Danny Africano of Lignum, Ireland, with his stripped-back approach to open fire cooking. In February, Jaime Ortola of Fireside, Hong Kong, will bring his fearless experimentation to INA’s grill. March will highlight Benji Cross of Maison, Bali, showcasing timeless techniques such as smoking and wood-fire grilling to draw out deep, elemental flavours.

April’s edition will welcome Australian culinary icons and founders of Porteño, Ben Milgate and Elvis Abrahanowicz, followed later that month by Adam Liston and Nate Scutter of Yakisan, Adelaide, who bring traditional Japanese methods to the forefront with a refined emphasis on fire. Rounding off the season in May, the final event will feature master butcher and restaurateur Hendrik Dierendonck, renowned for his heritage-driven perspective on butchery and flame-led cooking.

Upon announcing the series, Chef Glen Ballis shared, “The Masters of Fire series was born to create something bigger than a dining experience. These collaborations are about exchange, creativity, and discovering what is possible when the world’s greatest talents meet around the fire. Each chef brings a distinctive voice and passion, and together we will craft a journey unlike anything Dubai has seen before.”

With Dubai continuing to rise as a global dining capital, the Masters of Fire series reflects INA’s role as a cultural bridge, positioning the city as a platform for culinary innovation.
